Hummus with roasted red pepper

Hummus is a smooth and creamy puree of chickpeas and tahini seasoned with lemon juice and garlic. It is a very popular dip in Middle East and Greece. I believe that roasted red pepper hummus is the best hummus variation of all times. You can serve it with pita bread wedges and /or assortment vegetables.

Ingredients

2 cups canned chickpeas, drained

½ cup Tahini (sesame seed paste)

1 roasted red pepper, chopped

¼ cup water

Olive oil

1 pinch paprika

2 cloves garlic, roughly chopped

2 lemon juice

Salt

Preparation

If you want to use dried chickpeas, you need to soak them in water overnight. Cook them until tender. Peel them. I guess canned chickpeas is more efficient because you can mash them up pretty well.

If you will use canned garbanzo beans, Peel the skins of chickpeas and place all ingredients in food processor. Process it until smooth, scraping the sides occasionally. I used diced roasted red pepper and parsley as garnish.

If you like it spicy, you can add cayenne pepper or a little cumin for an exotic Hummus.
