Congrats for your site. I signed in for weekly updates.
I just viewed a video on TRT Arabic Live TV about a traditional drink prepared in Turkey to celebrate the birth of a child. If includes a syrop made from a special mix of spices obtained at the attar and garnished with a variety nuts. Would you direct me to a reference where I can find a recipe for this drink? I know of a similar custom in Lebanon, where a mughlie is served to guests to celebrate the brith of a child.

    Salaam Mohamed,

The drink you described is traditional beverage offered and drunk to celebrate birth of child in my hometown (Adana, a province at Southern part of Turkey) It is called KAYNAR which means boiling.

I couldn’t reach a direct English source so I translated Turkish recipe into English. I hope it works for you!

    Recipe of Kaynar:

It is usually prepared from water, and lots of sugar, heated and spiced with galingale, cinnamon sticks, ginger, cloves, allspice and nuts. Spices shouldn’t be ground , you need to buy those as roots such as ginger root , galingale roots, and cinnamon sticks. In some areas nutmeg is used as well. It is optional.

    ingredients

    4-5 cinammon sticks
    1/3 cup allspice
    2-3 ginger roots
    1/3 cup cloves
    2-3 galingale roots
    nutmeg
    4 liters water
    2 kg sugar (4 lbs)
    coarsely chopped walnuts

    Directions

Make a pod with spices and tie it with a string. In a large pot, pour 4 liters water and 2 kg (4 lbs) sugar and stir until the sugar dissolves. Place the pod in water and sugar mixture. Let that boil on medium high heat. Once it comes to boil, turn the heat down to low and simmer for 2 hours or water is completely darken and get consistency like syrup by stirring once in a while. Serve hot in coffee cups with 3-4 tsp chopped walnuts on top.

Note: you could keep the leftover beverage in jars in the fridge for a while. When you need it, heat it up and serve again.
