Acma is a well-known pastry that you could find easily in any bakery in Turkey. To be able to make it right at home, some secrets must be known. First of all, ingredients should be in room temperature. Secondly you need to knead it well to get a good result. Lastly the dough sould be rest in a warm place for at least 30 minutes to doubled in size.
Ingredients:
- 1 cup warm milk
- 1/2 cup warm water
- 1/3 cup oil (corn, sunflower or olive oil)
- 50g soft butter
- 2 tsp instant yeast
- 1/3 cup granulated sugar
- 1 tsp salt
- All-purpose flour (approx 4 and 1/2 cups)
- 2 eggs, whites and yolks seperated
for top
- egg yolks
- Sesame seed & black sesame seed (optional)
Directions
In a medium mixing bowl, combine lukelike warm milk, and water, sugar and yeast together. Stir oil, butter, salt, egg whites in milk mixture and gradually add flour . Knead that evenly for 10 minutes and let it rise for a few hours in a warm place to be smooth, silky and fluffy dough.
Grab 2 pieces at a time dough approximately as big as a golf ball. Give them thin and long shape like a snake by rolling. Twist them together and stick the edges together to make them round like ring. Beat egg yolks and brush bagels with that.
Sprinkle black and white sesame seeds if you like. I didn’t use this time but it depence on you. Place them in a lightly greased cookie sheet and pop them to 375 F pre-heated oven for 25 minutes or until golden brown.

Not: ben çörek otu kullanmadım bu sefer ama dilerseniz çörek otu serpebilirsiz pek tabi.
Malzemeler
- 1 su bardağı ılık süt
- 1/2 su bardağı ılık su
- 1/2 su bardağı sıvı yağ
- 50gr tereyağ veya margarin
- 1 paket kuru maya
- 2 yemek kaşığı şeker
- 2 yumurta (akları içine sarıları üzerine)
- 1 çay kaşığı tuz
- Alabildigi kadar un
Üzeri için;
- Yumurta sarısı
- Çörekotu
Hazırlanışı;
Malzemeler karıştırma kabına alınır. Yumuşak bir hamur elde edene kadar yoğurulur. 30-45 dk kadar mayalandırılır. Şekil verip, tepsiye dizilir. Üzerine yumurta sarısı sürülür. Dilerseniz çörekotu serpip 170 derece önceden ısıtılmış fırında pişirilir. Afiyet olsun.
