One of the Turkish blog writer I follow is describing the fried foods as “prejudicial beauty”. Isn’t she right? They are tasty but, compare to healthier ones, not that healthy and high in calorie foods. But once in a while it is good to eat those kind of foods as well.

I used eggplant, zucchini, green pepper, carrot, and red pepper. You could add more vegetables like yellow and orange bell peppers or potato. I didn’t pour any sauce on the vegetables to take a good picture of it as a rainbow, but you could prepare garlic flavored yogurt, using;

  • a cup of plain yogurt
  • 2 cloves garlic, minced
  • salt

In a small bowl, whisk yogurt, grated or minced garlic and salt evenly and pour over the fried vegetables. If  want to get more tasty yogurt sauce, you could also use 1/2 cup sour cream + 1/2 cup yogurt instead of  just yogurt.

Or you could make garlic flavored tomato sauce by using;

  • 3 medium ripe tomatoes, peeled and diced
  • 2 clove garlic, minced
  • 3 tbsp olive oil
  • salt

In a medium pot, saute peeled and petite diced tomatoes in olive oil on medium heat until tender. Add minced garlic and salt. Simmer a few minutes more and turn the heat off. Pour over the fried vegetables and garnish with chopped fresh dill or flat leaf parsley and serve.
