This pizza was completely my imagination. Actually, it was also a dream whole time during the pregnancy. Since I had gestational diebeties for the both preagnancies of mine, I didn’t want to prepare pizza or anything with the dough. Because I knew I couldn’t count my carb intake. It is really hard to decrease or count foods you like. Anyhow, now I made it real. I love it, I am sure you ll like it too.

I divided the dough into two balls so I had two kinds of pizza. This one was with artichoke and the other one was full of vegetables like mushrooms, tomatoes, onions, peppers, olives. I think it would be great to add baby spinach as topping with artichoke pizza but I could’t have when I start to make it, so I didn’t mind not having it.
Basic Pizza Dough
  • 1 package active dry yeast
  • 3/4 cup warm water, about 110 degrees F
  • 1 teaspoon sugar
  • 1 tablespoon extra-virgin olive oil
  • 1 and 3/4 cups all-purpose flour, plus extra for kneading
  • 1 teaspoon salt

 

For topping

 

  • 1 (15-ounce) can artichoke hearts in water, drained and thinly sliced
  • 6 grape tomatoes, halved
  • Freshly ground black pepper
  • ½ cup mozzarella, shredded
Parsley Pesto
  • ½ bunch flat leaf parsley
  • 2 cloves garlic
  • 3 tbsp Extra-virgin olive oil
  • Salt
Directions

 

In a small mixing bowl, whisk together yeast, warm water, sugar and olive oil. Let sit for about 3 minutes to fully dissolve and activate the yeast. Meanwhile, preheat oven to 400 degrees F.

In a large mixing bowl, whisk together flour and salt.
With a rubber spatula, gradually mix the yeast mixture into the flour until just combined and dough barely holds together. Turn the dough out onto a clean counter surface dusted with flour.

Knead the dough with flour-dusted hands until the dough has become smooth and elastic, about 10 minutes. The surface should be tight and silky and bounce back slightly when pressed. Lightly grease a large mixing bowl with olive oil and place the dough in it.

Cover the bowl tightly with plastic wrap and set in a warm place to rise until doubled in size, 1 to 2 hours.

Once doubled, punch the dough down and divide it into 2 equal pieces. Knead each 1 slightly to form a uniform ball. Set aside and cover them with a kitchen towel or plastic wrap to rest for 30 minutes.

To make pesto, put parsley florets, garlic, salt and olie oil into the food proccessor and smash it until smooth. Set aside.Put the pizza crust onto a pizza pan or cookie sheet. Spread the pesto all over the dough. Arrange artichoke wedges, tomato halves, ricotta cheese on the surface. Drizzle some olive on top. Bake until golden brown minutes.

Top with the mozzarella cheese and cook until cheese have melted and begin to bubble. Remove from oven and garnish with parsley. Cut it with pizza wheel or knife into wedges and serve.

Hamilelik esnasında hayalini kurduğum tamamen malzemelerin bir araya getirilişi kendi hayal ürünüm olan pizzalardan biri enginarlı diğeri de full sebzeli pizza idi. Neden o zaman yapmadın ki diyorsunuz değil mi? Maalesef hamilelik şekeri olanlar bu halden daha iyi anlar. Karbonhidrat alımını sınırlayıp yediğiniz karbları saymaya başlayınca işler değişiyor. Artık dayanamayıp fazlaca yiyeceğinizi düşündüğünüz şeylerden uzak duruyorsunuz tıpkı benim hayaliyle yetindiğim bu güzel pizza gibi. Neyse çok şükür ki hamilelikte kaldı. Allah sürekli bu diyeti yapmak zorunda kalanlara sabır versin.

Pesto için

  • ½ demet maydanoz
  • 2 diş sarımsak
  • Zeytinyağ
  • Tuz

Üzeri için

  • 1 kase enginar kalbi
  • 6-7 tane mini domates
  • 2-3 kaşık rikotta peynir
  • ½ cup kadar kaşar rendesi

Yapılışı

Hamuru yoğrulup dinlendirilip hafif yağlanmış pizza tepsisine yayılır. Maynadoz pestou hazırlamak için malzemeleri hepsi parçalayıcıdan geçirilir. İncecik serilmiş hamurun üzerine yayılır.

Üzerine dilimlenmiş enginar kalbi, ikiye bölünmüş mini domates artı ricotta peynir yerleştirilir. Önceden 200 C derece ısıtılmış fırında kızarıncaya dek pişirilir. Çıkarilıp kaşar rendesi serpilip peynir eriyene dek tekrar fırınlanır. Dilimlenip sıcak servis edilir.
