Shepherd’s salad is a classic Turkish salad that everybody knows in Turkey. It is very refreshing, especially in the summer, when the vegetables are fresh and crisp. It is a combination of finely chopped tomatoes, cucumbers, onions, green peppers and flat-leaf parsley. The dressing consists of a simple mix of lemon juice, extra virgin olive oil and salt. English cucumbers are best for this salad; if you want to use large cucumber, remove seeds. I took the picture before adding salad sauce that’s why it looks pale:)



Ingredients

Serves 6

  • 2 Large Tomatoes, peeled, seeded & diced
  • 2 Cucumbers, peeled, seeded & diced
  • 3 small Green Peppers (Italian pepper)
  • 2 Green Onions
  • 1 medium onion
  • A handful flat-leaf Italian Parsley, finely chopped
  • A handful fresh mint

Dressing

  • 1 Lemon Juice
  • 1/4 cup Olive oil
  • Salt
Preparation


Dice all the vegetables as petite as you can. Combine all ingredients in a medium bowl. Mix dressing in a jar and shake it. Pour over the salad and gently toss. just before serving add salt to taste.

Bütün sebzeleri doğrayabildiğiniz kadar küçük küp doğrayıp salata kasesine alın. Limon suyu, zeytinyağ ve tuzunu da ekleyip karıştırın.
