Mercimegi pisirdikten sonra, az bir tereyagi ile sogani kavurup mercimekleri de ekleyerek biraz kavurun.

Yapilisi:

Hamur yogrulduktan sonra mayalanmasini beklemeden hemen 5-6 bezeye ayrilip, her biri acabildiginiz incelikte aciliyor. Uzerine firca ile tereyagi surdukten sonra katlayip kare haline getiriliyor. Bu islem ikinci bir kere daha yapiliyor (arada yag surulup katlananlari buzdolabinda bekletirseniz tekrardan acilmasi daha kolay oluyor, malum yag donuyor biraz).

Ucuncu kere acarken A-4 kagidi buyuklugune getirip, uzun kenarina ic konup rulo seklinde sariliyor. Rulo halindeki butun parcalar tepside yan yana koyulup kesildikten sonra uzerine yumurta surulup firinda pisiriliyor.

This dish belongs to our friend Sena. It is really delicious! she said that the recipe is from “portakalagaci.com” but the original recipe is with meat filling.

Ingredients:

For dough

5 cups flour

2 cups warm water

1 tbsp dry yeast

1 tbsp sugar

Salt

6-7 ounces melted butter (To brush the dough)

1 egg (to brush on top of pastry sheets)

Filling:

1 cup dry brown lentil

1-2 onion finely chopped

Salt

Pepper

2 tbsp butter

Preparation:

Boil the lentil in enough water and when it is tender, drain and set aside. Oil the pan with 2 tbsp butter and add chopped onions. Sauté onion until lightly browned. Add lentil, salt and pepper. Stir to combine and sauté for a few minutes more. Set aside to cool room temperature.

Combine all ingredients for dough and knead it without waiting. Divide the dough into 5 pieces and make them like balls.

Roll the dough balls really thin as wide as a parchment paper or a pastry sheet. Then brush it with melted butter and fold them like envelope and roll again. Do the same thing twice.

Spread enough filling to the long side of pastry sheet. Wrap and roll it till end. Repeat the process for remaining pastry sheets.

Place them on a greased baking dish and cut them into bite size pieces then brush with egg wash. Bake 350 F pre-heated oven for about 35-40 minutes.
