This is a quick, fix dish for breakfast in Turkey. Menemen is commonly preffered by single men since it is easy and quick.
1 big onion finely chopped
3 tomatoes petite diced
1 fresh green pepper diced
3-4 whole eggs
2 tbsp olive oil
Sauté chopped onions with oil in a medium skillet. Add green pepper, sauté until tender. Add diced tomatoes and stir to combine.
Sprinkle some salt and pepper to taste. When tomatoes become soft, crack the eggs. You can mix them well or you may leave the eggs on top without stirring until cooked.
