ingredients:

1/2 package of shell pasta
1 roasted green pepper diced
1 roasted red pepper diced
4 tbsp finely chopped parsley
1 roasted eggplant cut in small cubes
4-5 thinly sliced green onions
2 tomatoes petite diced
2 tbsp olive oil
1 tsp salt
1 tsp pepper

preparation:

Cook pasta according to the instructions on package. Drain and set aside.
Put all diced, chopped and sliced veggies in a large mixing bowl, add shell pasta. Drizzle olive oil, salt, and pepper mixture over pasta salad.

If you add 1 clove of minced garlic, it will be fantastic!
