Ingredients:

2 eggs
½ cup oil
½ cup orange juice
½ cup sugar
2 tbsp honey
1 lemon zest
1 tsp baking powder
1 tsp vanilla
1 and ¾ cup all-purpose flour
½ tsp salt

Preparation:

Combine flour, baking powder and salt in a medium mixing bowl. In another bowl, crack the eggs, add sugar and beat them until smooth. Add oil, orange juice, honey, vanilla and keep whisking for about 3 minutes. Gradually Add flour mixture to the egg mixture and beat them a few minutes more.

Place paper cups in cup cake tins and pour 2 tbsp batter in each tin. Pop that to the 350 F preheated oven and bake for 15-20 minutes or until golden brown.

Sift some powdered sugar on top of them to get a nice appearance. It makes approximately 17 cupcakes.
