ingredients:

3 Roma tomatoes cut into wedges
1/3 cup sliced green olives
snipped fresh mint leaves
1 carrot sliced with peeler
1 cucumber sliced with peeler
1 lemon juice
2-3 olive oil
salt

preparation:

place tomato wedges on a platter and put sliced cucumbers and carrots in the middle of salad platter. Sprinkle mint leaves and sliced green olives on top of tomatoes. Combine olive oil, lemon juice, salt and pour over the salad.
