Ingredients:

2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ tsp ground ginger
½ teaspoon salt
2 cups shredded carrot (lightly packed)
¾ cup cooking oil
4 whole eggs
½ cup Chopped walnut

Preparation:

1. Preheat the oven to 350 F. In a large bowl, stir dry ingredients; flour, sugar, salt, baking powder, chopped walnut, cinnamon, ginger; set aside.

2. In another bowl, combine the rest of ingredients; shredded carrot, eggs, oil.

3. Add egg mixture to flour mixture gradually and stir with a spatula. Pour batter into the prepared (greased) pan. I used 10 inch fluted tube pan, you can use whatever you have at home.

4. Bake for 35 minutes or until a toothpick inserted center and comes out clean.
