Fattoush Salad

Salad belongs to Syrian and Lebanon cuisine. There are some variations like, some people use cumin powder in vinaigrette instead of sumac, some use thinly sliced red onion or diced green peppers. But My friend (She is from the area) said this version (recipe below) is the real, original one that they used to make this salad. The only difference,normally they deep fry pita chips, I prefered baking them instead of frying to be able to make it completely healthy salad.

Ingredients

  • 3/4 cup cherry tomatoes, halved
  • 4 green onion, thinly sliced
  • 3/4 cup English cucumber, peeled, seeded and diced in 1/4 inch cubes
  • 1/4 cup finely chopped parsley (about 1/2 a bunch
  • 1/4 cup finely chopped mint (about 1/2 a bunch)
  • 2 cups hearts of romaine lettuce (about 1 heart), torn roughly by hand
  • 2 pieces of pita bread
Lemon vinaigrette
  • 1 freshly squeezed lemon juice
  • 2 tbsp olive oil
  • 2 tbsp extra virgin olive oil
  • Salt
  • Sumac
Serves 4 as a side dish
preparation
To make the pita chips, preheat oven to 350˚. Cut each into small cubes and arrange on a baking sheet. Toast for approximately 12 minutes, or until the pita chips crisp up and are golden brown. Set aside and cool.

To make the vinaigrette, in a small bowl, whisk together lemon juice, extra virgin olive oil, olive oil, and sumac. Season with salt to taste. Set aside.

In a large bowl, Combine, romaine hearts, cherry tomatoes, cucumber, mint, parsley and green onion with the vinaigrette. Make sure that the leaves are well coated with the vinaigrette. Add pita chips on top and toss evenly. Serve immediately.

1 kase kiraz domates
2 salatalık
½ demet maydanoz
½ demet taze nane
5-6 dal taze soğan
1 limon suyu
Zeytinyağ
Tuz
Sumak
2 pita ekmek

Hazırlanışı

Pita ekmeği küçük küplere kesip fırında kızartıp soğutun. Kıyılmış marul, ikiye kesilmiş kiraz domatesleri, küp doğranmış salatalığı, kıyılmış nane, maydanoz ve yeşil soğanı karıştırma kabına alın. Üzerine hazırladığınız küp ekmekleri serpin. Limon suyu, sumak, tuz ve zeytinyağ kavanozda çalkalayıp salatanın üzerine gezdirin. Ekmekler yumuşamadan hemen servis edin.
