Hazırlanışı

Buyuk bir karistirma kabinin icine, Butun kozlenmis sebzeleri salata yapar gibi kucuk dograyin. Sogani kucuk kupler halinde dograyip sarimsaklari ezin. Maydanozu incecik kiyin. Tuz, karabiber ve pul biberini atip zeyinyagi gezdirin. Karistirirken kozlenmis sebzelerin ezilmemesine dikkat edin. Servis tabagina alin.

Eggplant is a popular vegetable in Turkey. I can’t even count how many dishes you can prepare with this vegetable. One of the most common and light versions of this veggie is roasted salad version.

Roasting vegetables is a great way to maximize the flavor and texture and also good way to prepare healthy foods. Eggplant salad is a wonderful example of roasted veggies.

ingredients:

  • 5 roasted small eggplants
  • 2 roasted green pepper
  • 3 roasted red peppers
  • 2 roasted tomatoes
  • 1 onion diced
  • 2 cloves garlic minced
  • 1/2 bunch flat-leaf parsley minced
  • salt
  • black pepper
  • crushed red pepper (optional)
  • paprika
  • olive oil

preparation:

In a large mixing bowl, chop all roasted veggies in small cubes. Add minced parsley, garlic, diced onion. Sprinkle salt, pepper paprika. Drizzle olive oil on top of vegetables. Stir them well to combine. Place on a platter to serve.
